Sodium metabisulfite is a white or slightly yellow crystalline powder that is easily soluble in water and releases sulfur dioxide. In the food industry, it is often used as a preservative, bleaching agent and antioxidant to extend the shelf life of food by inhibiting the growth of microorganisms. For example, in dehydrated vegetables, dried fruits, juices and winemaking, it can effectively prevent oxidative browning and maintain color and flavor. In the field of water treatment, it is used to remove residual chlorine and heavy metal ions, and reacts with chlorine to generate harmless chlorides, protecting pipeline equipment and reducing environmental pollution.
